1 bag store-bought meatballs<br />
12 slices string cheese, diced into bite-size pieces<br />
pizza sauce<br />

prepare dough and roll out flat on countertop.<br />
cut dough into 2 inch squares.<br />
place one frozen meatball and 2 pieces cheese in each square and shape into rolls.<br />
place in greased 9x13 baking dish.<br />
<b><i>(rolls can be frozen at this point, and then thawed for 4-6 hours before baking)</i></b><br />
bake at 375 degrees for 30 minutes.<br />
serve alongside pizza sauce as dip.<br />

<u>banana pudding poke cake</u></div>
1 sugar free yellow cake mix (plus the water, eggs, & oil it calls for)<br />
2 small sugar free, fat free banana pudding boxes<br />
4 cups cold milk<br />
1 tub sugar free cool whip<br />
(opt.) crushed nilla wafers<br />
<br />
bake yellow cake mix according to package instructions.<br />
let cool for a few minutes and use a wooden spoon handle to poke holes all over the cake.<br />
mix the two pudding powders with 4c. cold milk and stir well.<br />
let sit for just a minute until it begins to thicken.<br />
pour pudding over entire cake making sure it gets into the holes.<br />
let set in fridge for a couple of hours.<br />
"frost" cake by spreading tub of cool whip evenly over top just before serving.<br />
(opt.) top with crushed nilla wafers.<br />

6 c.  chicken broth <br>
2 c. water <br>
1 kielbasa sausage, sliced & browned<br>
1/2 stalk celery, chopped<br>
1 medium onion, chopped 1 medium carrot, sliced thin<br>
3 cloves garlic,minced <br>
1 t. dried thyme<br>
1/4 t. black pepper<br>
3 T. red wine vinegar</p>
<p>combine all ingredients except vinegar in slow cooker and cook on low for 8-10 hours or high for 4-6 hours.<br>
just before serving add red wine vinegar and stir well. </p>

For the most neat looking slices, treat it as a cheesecake – each time slice it with a hot dry knife.</span></div>

1 bag fritos (small fritos, not scoops)<br />
bring sugar and corn syrup to boil. once it starts to boil remove from heat and add peanut butter.<br />
stir together until peanut butter melts (I like to use chunky peanut butter) then, pour over the bag of Fritos.<br />
cool on a cookie sheet sprayed with pam!<br />
let it cool........then EAT UP!!<br />

1 bag large marshmallows<br />
3 T. butter<br />

melt butter over low heat on stovetop.<br />
add marshmallows and stir until melted.<br />
add cereal. mix well. shape into pan.<br />
let cool, and cut.<br />

1/2 of a lb. bag of dry black beans</div>

1 lb. bag dry pinto beans, rinsed</div>
1 small onion, diced<br />
1 ham hock (use your leftovers from the easter ham)<br />
8 c. water<br />
1/4 t. garlic salt<br />
1/2 t. pepper<br />

bring a pot of water to a boil, add black beans and simmer for 20 minutes.<br />
drain and rinse well. <br />
<span style="font-size: x-small;"><em>warning: (if you skip this part, trying to save time,</em></span><br />
<span style="font-size: x-small;"><em>like i always do....the whole pot of soup will turn black in the end. </em></span><br />
<span style="font-size: x-small;"><em>you have to boil the black off the beans first....now, proceed.)</em></span><br />
place black beans, pinto beans, onion, and ham hock in crock-pot.<br />
add 8 cups water.<br />
add garlic salt & pepper.<br />
cook on high 8 hours until beans are tender.<br />
